- Wash and slice your chicken breast into thin strips. Chop zucchini and bell pepper into bite-sized pieces. Mince the garlic. In a bowl, whisk together soy sauce, oyster sauce, honey, and sesame oil.
- Heat vegetable oil in a large skillet over medium-high heat. Once shimmering, add sliced chicken, season with salt and pepper. Stir-fry for 5-6 minutes until golden and cooked through. Remove chicken from pan.
- In the same skillet, add more oil and heat. Toss in zucchini and optional bell pepper, sauté for 3-4 minutes until tender-crisp. Add minced garlic and stir-fry for another 30 seconds.
- Return cooked chicken to the pan. Pour in sauce, stir to coat ingredients. Cook for 1-2 minutes until sauce simmers and heated through.
- Remove from heat. Garnish with sesame seeds and green onions. Serve over rice, noodles, or enjoy on its own.
