- Preheat your oven to 180 degrees Celsius (fan forced) and brush a rectangular baking pan with melted unsalted butter.
- Whisk together the eggs, thickened cream, salt, and freshly ground pepper until well combined and slightly frothy.
- Layer two sheets of fillo pastry in a concertina fashion to fill the bottom of your baking tray.
- Drizzle melted butter over the fillo layers, then layer in slices of brie cheese and thinly sliced figs.
- Pour the egg and cream mixture over the layered pastry and sprinkle fresh thyme on top.
- Bake in the preheated oven for approximately 35 minutes or until golden brown.
- Let the pie cool for a few minutes before slicing into squares and serve warm.
