  • 375 g Antoniou Fillo Pastry at room temperature
  • 150 g Unsalted Butter melted
  • 2 pcs Eggs
  • 1 cup Thickened Cream or non-dairy cream for vegan option
  • to taste Salt & Pepper adjust to preference
  • 500 g Double Brie Cheese cut into slices
  • 6 pcs Figs thinly sliced
  • 3 sprigs Fresh Thyme dried thyme works if fresh is not available

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180 degrees Celsius (fan forced) and brush a rectangular baking pan with melted unsalted butter.
  2. Whisk together the eggs, thickened cream, salt, and freshly ground pepper until well combined and slightly frothy.
  3. Layer two sheets of fillo pastry in a concertina fashion to fill the bottom of your baking tray.
  4. Drizzle melted butter over the fillo layers, then layer in slices of brie cheese and thinly sliced figs.
  5. Pour the egg and cream mixture over the layered pastry and sprinkle fresh thyme on top.
  6. Bake in the preheated oven for approximately 35 minutes or until golden brown.
  7. Let the pie cool for a few minutes before slicing into squares and serve warm.
