Preparation Steps
  1. Marinate the chicken thighs in buttermilk for at least 30 minutes or overnight. Pat dry after marinating.
  2. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment or a wire rack.
  3. Mix flour or cornstarch, garlic powder, onion powder, thyme, salt, and pepper in a bowl. Coat chicken evenly.
  4. Place chicken thighs skin-side up on the baking sheet. Bake for 30-35 minutes, until internal temperature is 165°F (74°C) and skin is crispy.
  5. Rest the chicken for about 5 minutes before serving, optionally garnishing with chopped parsley or chives.
