Step-by-Step Instructions
  1. Pat the white fish fillets dry, season with salt and pepper, and let rest.
  2. Heat olive oil in a skillet and sear halved baby potatoes cut-side down for 5-7 minutes.
  3. Increase heat, add olive oil, and cook fish fillets for 2-3 minutes on each side.
  4. Add unsalted butter, then sauté minced shallot for 2-3 minutes, followed by minced garlic for 1 minute.
  5. Pour broth into the skillet, scrape browned bits, simmer, then stir in heavy cream and rosemary.
  6. Combine seared potatoes and fish with sauce in the skillet, cover, and simmer for 5-8 minutes.
  7. Garnish with chopped parsley and serve immediately.
