  • 3 large Egg Whites must be at room temperature and fresh for optimal whipping
  • a few drops Green Food Color use gel food coloring for better vibrancy

Method

Step-by-Step Instructions
  1. In a medium bowl, whisk together the almond flour and powdered sugar until well combined. Set aside.
  2. In a large bowl, beat the egg whites on medium speed until thick, then gradually add granulated sugar and beat until stiff peaks form.
  3. Gently mix in green food coloring to the whipped egg whites until fully incorporated.
  4. Fold the almond flour mixture into the whipped egg whites gently in three additions, ensuring no over-mixing.
  5. Preheat the oven to 300°F (150°C).
  6. Pipe small circles of batter onto a baking sheet lined with parchment paper, leaving space between each.
  7. Let the macarons sit at room temperature for about 15 minutes to form a skin.
  8. Bake the macarons for 10-13 minutes, ensuring they rise and stay light green.
  9. Cool the baked macarons completely on the baking sheet.
  10. Once cooled, fill one shell with frosting and sandwich with another. Add sprinkles if desired.
