Preparation Steps
  1. In a medium bowl, combine chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk together for about a minute.
  2. Cover the bowl and refrigerate for about 3 hours or overnight.
  3. Soak raw cashews in hot water for about one hour, then drain. Blend with oat milk, maple syrup, lemon juice, turmeric, and lemon extract until smooth.
  4. Divide the chia mixture into small jars, filling them halfway and pressing down gently.
  5. Spoon the creamy cashew mixture on top of the chia layer, smoothing the surface.
  6. Refrigerate the assembled jars for another 3 hours, allowing the layers to meld.
  7. Before serving, top with fresh fruits like berries or kiwi.
