  • 4 oz Cream Cheese
  • 1 cups Granulated Sugar or brown sugar
  • 1 Egg
  • 2 cups All-Purpose Flour or whole wheat
  • 1 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 1 pinch Salt
  • 3 Mashed Overripe Banana very ripe
  • 0.5 cups Milk or almond/coconut milk
  • 2 tbsp Spiced Rum or vanilla extract
  • 1 Lime Zest
  • 1 Lime Juice
  • 1 tsp Vanilla Extract
  • 0.5 cups Chopped Pecans or walnuts/almonds
  • 0.5 cups Sweetened Flaked Coconut
For the Glaze
  • 1 cups Powdered Sugar adjust as needed
  • 2 tbsp Lime Juice fresh juice preferred
  • 0.5 cups Chopped Pecans for topping

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, cream together the butter and cream cheese until smooth.
  3. Gradually add sugar, mixing until light in color, then add egg, milk, spiced rum, lime zest, lime juice, and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Fold the dry ingredients into the wet mixture until just combined, then gently stir in the mashed bananas, chopped pecans, and sweetened coconut.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes until a toothpick comes out clean.
  7. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
