- Preheat your oven to 350°F (175°C).
- Spread about 1/2 cup of red enchilada sauce across the bottom of a 9x13-inch baking dish.
- In a large skillet, heat a tablespoon of oil over medium-high heat. Add ground beef, chopped onions, and minced garlic. Cook for 8-10 minutes until browned.
- Stir in 1 cup of enchilada sauce into the browned meat mixture and let simmer for 5 minutes. Fold in 1 cup of cheese until melted.
- Arrange flour tortillas on a flat surface. Spoon the beef mixture onto each tortilla and roll tightly. Place in the baking dish seam-side down.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese blend.
- Cover with aluminum foil and bake for 15 minutes, then remove foil and bake for another 10 minutes until cheese is bubbly.
- Let cool for a few minutes before serving. Garnish with cilantro or avocado as desired.
