Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Spread about 1/2 cup of red enchilada sauce across the bottom of a 9x13-inch baking dish.
  3. In a large skillet, heat a tablespoon of oil over medium-high heat. Add ground beef, chopped onions, and minced garlic. Cook for 8-10 minutes until browned.
  4. Stir in 1 cup of enchilada sauce into the browned meat mixture and let simmer for 5 minutes. Fold in 1 cup of cheese until melted.
  5. Arrange flour tortillas on a flat surface. Spoon the beef mixture onto each tortilla and roll tightly. Place in the baking dish seam-side down.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese blend.
  7. Cover with aluminum foil and bake for 15 minutes, then remove foil and bake for another 10 minutes until cheese is bubbly.
  8. Let cool for a few minutes before serving. Garnish with cilantro or avocado as desired.
