Preparation Steps
- Blend together 1 cup of Medjool dates and ½ cup of almonds in a food processor on high speed until the mixture resembles damp sand.
- Add 1 cup of rolled oats, ¼ cup of cocoa powder, 2 tablespoons of chia seeds, and 2 tablespoons of melted coconut oil. Process until fully combined.
- Scoop about a tablespoon of the mixture and press it into a ball, repeat until all mixture is formed into balls.
- Place energy balls on a tray lined with parchment paper and chill in the refrigerator for at least 30 minutes.
