- Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.
- Squeeze excess moisture from the well-thawed frozen chopped spinach using a clean kitchen towel.
- In a mixing bowl, combine the drained spinach, crumbled feta cheese, ricotta (if using), minced garlic, chopped dill or parsley, and egg. Season with salt and black pepper.
- On a floured surface, roll out the puff pastry sheets and cut them into rectangles. Place the filling along one edge of each rectangle.
- Roll the pastry tightly around the filling and slice into 1-inch rounds.
- Arrange the rolls cut-side up on the baking sheet. Brush with egg wash and sprinkle with seeds if desired.
- Bake for 18–22 minutes until puffed and golden brown. Keep an eye towards the end to avoid over-browning.
- Let the rolls cool slightly before serving warm or at room temperature.
