  • 2 sheets Puff Pastry Sheets Thawed if frozen
For the Filling
  • 10 oz Frozen Chopped Spinach Well-thawed and drained
  • 8 oz Feta Cheese Crumbled; substitute with goat cheese if desired
  • 4 oz Ricotta or Cream Cheese Optional
  • 1 large Egg Binds filling and for egg wash
  • 2 cloves Garlic Minced
  • 1 small Onion Finely chopped, optional
  • 2 tbsp Fresh Dill or Parsley Chopped
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Finishing Touches
  • 1 large Egg Wash 1 beaten egg mixed with water or milk
  • Sesame or Poppy Seeds Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.
  2. Squeeze excess moisture from the well-thawed frozen chopped spinach using a clean kitchen towel.
  3. In a mixing bowl, combine the drained spinach, crumbled feta cheese, ricotta (if using), minced garlic, chopped dill or parsley, and egg. Season with salt and black pepper.
  4. On a floured surface, roll out the puff pastry sheets and cut them into rectangles. Place the filling along one edge of each rectangle.
  5. Roll the pastry tightly around the filling and slice into 1-inch rounds.
  6. Arrange the rolls cut-side up on the baking sheet. Brush with egg wash and sprinkle with seeds if desired.
  7. Bake for 18–22 minutes until puffed and golden brown. Keep an eye towards the end to avoid over-browning.
  8. Let the rolls cool slightly before serving warm or at room temperature.
