- Start by washing and drying the mini or Persian cucumbers thoroughly. Cut off both ends, then create accordion cuts by inserting chopsticks along the length to limit how deep you slice. Cut diagonally at a 45° angle, then turn the cucumber 90° and slice again. Halve the spiraled cucumber and place the pieces in a large mixing bowl.
- In a small bowl, whisk together low-sodium soy sauce, rice vinegar, sesame oil, honey, minced garlic, and crushed red pepper flakes. Blend these flavors well until smooth. Taste and adjust seasoning as desired.
- Pour the flavorful dressing over the prepared cucumbers in the mixing bowl. Toss carefully to coat them without breaking apart.
- Sprinkle sliced green onions and sesame seeds generously over the top of your freshly dressed spicy cucumber salad. Serve immediately for that delightful crunch.
