  • 1/2 cup Half and Half or whole milk

  • 1 tbsp Pumpkin Pie Spice or use homemade
  • 1/4 tsp Salt sea salt recommended

  • 1 cup Pecans toast for extra flavor
  • 2 tbsp Butter or vegan butter
  • 1/4 cup Maple Syrup or honey
Crust
  • 1 pie crust Pie Crust homemade or store-bought
  • 1 cup Flour whole wheat flour optional
  • 2 tbsp Sugar optional
  • 1/4 tsp Salt a pinch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Pre-bake the pie crust for about 10-15 minutes until golden brown if store-bought.
  2. In a large mixing bowl, combine pumpkin puree, brown sugar, eggs, half and half, bourbon, pumpkin pie spice, and salt. Whisk until smooth.
  3. Spread pecans on a baking sheet and toast in the oven for about 8-10 minutes until fragrant and lightly browned.
  4. Pour the prepared filling into the pre-baked crust and sprinkle the toasted pecans on top, pressing them gently into the filling.
  5. Bake the pie at 350°F (175°C) for about 30-40 minutes, until the filling is set and a knife comes out clean.
  6. Cool on a wire rack for at least 1-2 hours before slicing.
  7. Serve plain or with whipped cream or vanilla ice cream.
