Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and brown the chicken pieces for about 5-6 minutes.
  3. Sauté onion in the same skillet for 3-4 minutes, then add garlic, red bell pepper, and zucchini; cook for another 3-4 minutes.
  4. Stir in spinach, oregano, thyme, and crushed red pepper flakes; cook until spinach wilts, about 2-3 minutes.
  5. Add orzo, chicken broth, and lemon juice; mix thoroughly.
  6. Nestle browned chicken back in the skillet, cover, and bake for 25-30 minutes.
  7. Remove from oven, top with feta, parsley, and olives, and bake for an additional 5 minutes.
  8. Let it sit for a few minutes before serving.
