- Heat the oil in a large frying pan over medium heat, about ¼ inch deep, for 3–4 minutes.
- Gently drain and pat dry the canned sardines.
- Whisk the cage-free organic eggs in a bowl and season with salt, pepper, and parsley.
- In a separate bowl, add flour and coat each sardine, then dip into the egg mixture.
- Fry coated sardines in hot oil for about 2 minutes on each side until golden.
- While frying, mix mayonnaise, garlic, and lemon juice for the aioli.
- Serve the fried sardines with aioli for dipping, garnished with lemon wedges.
