For the Aioli

Method
 

Cooking Steps
  1. Heat the oil in a large frying pan over medium heat, about ¼ inch deep, for 3–4 minutes.
  2. Gently drain and pat dry the canned sardines.
  3. Whisk the cage-free organic eggs in a bowl and season with salt, pepper, and parsley.
  4. In a separate bowl, add flour and coat each sardine, then dip into the egg mixture.
  5. Fry coated sardines in hot oil for about 2 minutes on each side until golden.
  6. While frying, mix mayonnaise, garlic, and lemon juice for the aioli.
  7. Serve the fried sardines with aioli for dipping, garnished with lemon wedges.
