Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Wash the baby potatoes under cool running water, pat them dry and slice them in half.
  4. Chop the bacon into small, bite-sized pieces.
  5. In a mixing bowl, toss halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  6. Spread seasoned potatoes in a single layer on the baking sheet.
  7. Evenly distribute chopped bacon over the seasoned potatoes.
  8. Roast for 30-35 minutes, flipping halfway through.
  9. In the last 5 minutes of roasting, drizzle honey over the potatoes and bacon.
  10. Garnish with fresh parsley before serving.
