  • 3 cups Cucumbers Salt and drain to remove excess moisture.
  • 1/2 cup Fresh Mint Tear leaves just before serving.
  • 1 small Red Onion Soak in cold water for 10 minutes.
  • 3 stalks Scallions Soak in ice water for crispness.
For the Dressing
  • 1/4 cup Olive Oil Can substitute with another oil.
  • 2 tablespoons Vinegar Adjust to taste.
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Crushed Red Pepper Flakes Optional.

Method
 

Preparation Steps
  1. Wash cucumbers, peel, trim ends, cut in half lengthwise, scoop out seeds, and slice into 1/4-inch thick half-moons.
  2. Place sliced cucumbers in a colander, sprinkle with kosher salt, and let drain for 30 minutes.
  3. While cucumbers drain, slice scallions and soak in ice-cold water for 20 minutes.
  4. Slice red onion thinly and soak in cold water for 10 minutes.
  5. In a mixing bowl, combine drained cucumbers, soaked scallions, and red onions, along with torn mint leaves.
  6. Drizzle vinegar and black pepper over the mixture, toss to combine.
  7. Add olive oil and toss again until well-coated.
  8. Serve the salad immediately for the best flavor.
