  • 1 cup Mayonnaise Or Greek yogurt for a lighter texture.
  • 2 tablespoons Olive Oil Extra virgin for the best flavor.
  • 2 tablespoons Lemon Juice Freshly squeezed for optimal taste.
  • 1 teaspoon Dijon Mustard Optional for a classic aioli experience.

Method
 

Aioli Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the outer layers of a head of garlic and slice off the top.
  3. Drizzle garlic with olive oil, wrap in foil, and roast for 30-40 minutes.
  4. Once cooled, squeeze roasted garlic into a bowl and mash into a smooth paste.
  5. In another bowl, mix mashed garlic with mayonnaise, lemon juice, and Dijon mustard until smooth.
  6. Season with salt and pepper to taste and stir to combine.
  7. Optionally, fold in chopped parsley or chives.
  8. Transfer to an airtight container and chill for at least 30 minutes before serving.
