Ingredients

For the Noodles
  • 1 pack Knife cut noodles Substitute with your favorite noodle or pasta that holds sauce well.
For the Sauce
  • 1 cup Creamy peanut butter Use smooth peanut butter for the best finish.
  • 2 tbsp Regular soy sauce Avoid low-sodium versions for better flavor.
  • 1 tbsp Chili oil Adjust based on spice tolerance; Sriracha can be an alternative.
  • 1 tbsp Chinese black vinegar Rice vinegar can be used as a substitute.
  • 1 tbsp Granulated sugar Optional; omit for less sweetness.
For Garnishing
  • 1 tbsp Cilantro Optional, for brightness.
  • 1 tbsp Green onions Optional, for freshness.

Equipment

  • large pot
  • Medium mixing bowl
  • whisk

Method

Preparation Steps
  1. Boil the Noodles: Bring a large pot of salted water to a rolling boil. Add the knife-cut noodles and cook for about 5 minutes or until al dente.
  2. Prepare the Peanut Sauce: In a medium bowl, combine peanut butter, soy sauce, chili oil, vinegar, and sugar. Whisk until smooth.
  3. Adjust the Sauce Consistency: If the sauce is too thick, add 1 to 2 tablespoons of the hot noodle cooking water until desired consistency is reached.
  4. Combine Noodles and Sauce: Drain noodles and return to pot or bowl. Pour sauce over and toss until evenly coated.
  5. Serve and Garnish: Serve warm, drizzling with extra chili oil and garnishing with cilantro or green onions.
