Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground meat, finely chopped onion, minced garlic, breadcrumbs, egg, salt, and pepper. Mix gently until just combined.
  2. Roll the meat mixture into small balls, about 1 to 1.5 inches in diameter. Heat olive oil in a skillet over medium heat and brown the meatballs for about 4-5 minutes on all sides.
  3. In the same skillet, sauté minced garlic and grated ginger over medium heat for about 1 minute. Stir in red curry paste and coconut milk, whisk until smooth, then add soy sauce and lime juice, letting the sauce simmer for 2-3 minutes.
  4. Return the browned meatballs to the skillet, cover, and simmer for 10-15 minutes over low heat.
  5. Remove from heat, garnish with cilantro, and serve hot over jasmine rice or with crusty bread.
