Method
 

Step-by-Step Instructions
  1. Preheat the fridge and place 8 ramekins on a sheet pan.
  2. Combine granulated sugar and orange zest in a bowl, rubbing them together.
  3. Simmer heavy cream with the orange sugar mixture for about 10 minutes.
  4. Squeeze oranges to yield about ½ cup of orange juice.
  5. Strain the cream mixture, stir in orange juice, and let cool for 20 minutes.
  6. Pour the mixture into ramekins and chill for at least 4 hours until set.
  7. Combine semi-sweet chocolate and additional cream in a bowl, microwave until smooth.
  8. Once possets are set, spoon ganache on top and chill until firm.
