- Preheat the fridge and place 8 ramekins on a sheet pan.
- Combine granulated sugar and orange zest in a bowl, rubbing them together.
- Simmer heavy cream with the orange sugar mixture for about 10 minutes.
- Squeeze oranges to yield about ½ cup of orange juice.
- Strain the cream mixture, stir in orange juice, and let cool for 20 minutes.
- Pour the mixture into ramekins and chill for at least 4 hours until set.
- Combine semi-sweet chocolate and additional cream in a bowl, microwave until smooth.
- Once possets are set, spoon ganache on top and chill until firm.
