Step-by-Step Instructions
  1. Gather all the ingredients for your Apple Cider Beef Stew. Chop the beef chuck, dice the onions, and mince the garlic. Peel and slice the carrots and potatoes, and chop the celery.
  2. In a pot, heat a tablespoon of oil over medium-high heat. Add beef in batches, searing until browned on all sides (5–7 minutes). Remove and set aside.
  3. In the same pot, add more oil if needed, then sauté diced onions and minced garlic for 3–4 minutes until translucent.
  4. Return seared beef to the pot and mix in carrots, celery, and potatoes. Pour in apple cider, add thyme, bay leaves, salt, and pepper. Stir to combine.
  5. Bring to a gentle boil before reducing to low heat. Cover and let simmer for 1.5 to 2 hours, stirring occasionally.
  6. After cooking, taste and adjust seasoning. For thicker stew, simmer uncovered for an additional 10-15 minutes.
  7. Serve in bowls and garnish with parsley or apple slices. Pair with crusty bread or mashed potatoes.
