Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil.
  2. In a large mixing bowl, whisk the eggs until well blended and frothy, about 2-3 minutes.
  3. Gently fold in the cottage cheese until lump-free.
  4. Stir in the shredded cheddar cheese until fully incorporated.
  5. Add the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder. Mix well.
  6. Combine baking powder with a splash of water to activate, then mix into the egg mixture.
  7. Drizzle in the olive oil and mix until smooth and cohesive.
  8. Spoon the batter into the muffin tin cups, filling them about ¾ full.
  9. Bake for 18-20 minutes until set and lightly golden brown on top.
  10. Allow to cool in the tin for about 5 minutes before removing.
  11. Serve warm or store in an airtight container in the fridge for up to 4 days.
