  • 1 tablespoon sugar

  • 1 teaspoon vanilla extract or almond extract
  • 1 tablespoon grated lemon zest
  • 1 tablespoon grated orange zest
  • 4 cups flour plus more for dusting; all-purpose or bread flour preferred
  • 1 pinch salt
For the Filling
  • 1 cup raisins or dried cranberries
  • 1 tablespoon rum extract optional
  • ½ cup candied lemon and orange peel or dried apricots
For the Topping
  • 1 egg white for topping or plant-based milk
  • 1 tablespoon icing sugar optional

Method
 

Step-by-Step Instructions
  1. Grease a Panettone mold with butter. In a bowl, mix warm milk with dried yeast and sugar; let sit for 10 minutes.
  2. Cream together butter and sugar until fluffy. Gradually beat in eggs until smooth.
  3. Add lemon zest, orange zest, flour, and salt to the mixture. Stir until dough begins to form, then knead for 10 minutes.
  4. Let the kneaded dough rise in a greased bowl for about 2 hours or until doubled in size.
  5. Soak raisins in rum extract for 10 minutes. Knead soaked fruits and candied peel into the dough.
  6. Shape the dough into a ball and place it into the prepared mold. Let rise for another hour.
  7. Preheat oven to 350°F. Brush the top with egg white and bake for 50-55 minutes.
  8. Cool in the mold for 10 minutes, then transfer to a wire rack to cool completely.
