Method
 

Step-by-Step Instructions
  1. In a food processor, add the cooked chickpeas and pitted dates. Blend on high for 1-2 minutes until creamy.
  2. Add oats, nut butter, honey or maple syrup, vanilla extract, cinnamon, and salt. Blend for another 1-2 minutes until combined.
  3. If using, fold in dark chocolate chips gently without over-processing.
  4. Line an 8x8-inch baking dish with parchment paper.
  5. Transfer the mixture into the baking dish, spreading evenly and pressing down to create a compact layer.
  6. Refrigerate for at least 1 hour to set.
  7. Lift the bars out using the parchment paper and slice into desired shapes.
