Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. Cream the room-temperature butter and granulated sugar together in a stand mixer until smooth and fluffy, about 3-4 minutes.
  4. Add the egg, egg yolk, and vanilla extract into the creamed mixture and mix on medium speed until fully combined.
  5. Gradually incorporate the dry flour mixture into the wet batter, mixing until just combined and avoiding overmixing.
  6. Scoop out the dough using a 3-tablespoon cookie scoop and roll each piece into a ball, then roll in granulated sugar.
  7. Place the cookie dough balls on the prepared baking sheets and bake for 11 to 12 minutes until edges are golden.
