Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish with butter.
- Melt 2 tablespoons of butter in a medium skillet over medium heat. Add chopped onion and sauté for 5 minutes until softened. Stir in minced garlic and cook for an additional minute.
- Add corn kernels to the skillet and sauté for 2-3 minutes until warmed through.
- In a mixing bowl, whisk together 3 eggs, 1 cup of milk, and a dash of salt and pepper until smooth.
- Fold the sautéed corn and onion mixture along with 1.5 cups of shredded cheddar into the egg mixture.
- Pour the filling into the prepared pie dish and spread evenly.
- Bake in the preheated oven for 35-40 minutes until the center is set and lightly golden.
- Remove from oven and let cool for at least 10 minutes before slicing.
