- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine cubed zucchini, chopped green bell pepper, diced onion, and halved grape tomatoes.
- Sprinkle the Italian herb blend and garlic powder over the vegetable mixture. Layer half of the mozzarella cheese on top and season with salt and cracked black pepper.
- Drizzle olive oil over the mixture and stir to coat all ingredients.
- Transfer to a baking dish and bake for about 20 minutes until the vegetables soften.
- Sprinkle the remaining mozzarella cheese over the top and bake for an additional 10 minutes until melted and golden.
- Garnish with parsley and red chili flakes before serving warm.
