  • 2 medium Zucchini cubed
  • 1 medium Green Bell Pepper chopped
  • 1 medium Onion diced
  • 1 cup Grape Tomatoes halved
For the Flavor
  • 1 tablespoon Italian Herb Blend or homemade blend
  • 1 teaspoon Garlic Powder or fresh garlic
For the Cheesy Goodness
  • 2 cups Mozzarella Cheese reserve half for topping
  • 1 cup Cheddar or Dairy-Free Cheese optional
For the Baking
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Cracked Black Pepper

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine cubed zucchini, chopped green bell pepper, diced onion, and halved grape tomatoes.
  3. Sprinkle the Italian herb blend and garlic powder over the vegetable mixture. Layer half of the mozzarella cheese on top and season with salt and cracked black pepper.
  4. Drizzle olive oil over the mixture and stir to coat all ingredients.
  5. Transfer to a baking dish and bake for about 20 minutes until the vegetables soften.
  6. Sprinkle the remaining mozzarella cheese over the top and bake for an additional 10 minutes until melted and golden.
  7. Garnish with parsley and red chili flakes before serving warm.
