  • 1 jar Marinara Sauce Choose your favorite.
  • 12 oz Mozzarella Cheese Fresh for best results.
  • 1/2 cup Parmesan Cheese Grated, for topping.
For the Roasted Vegetables
  • 2 Bell Peppers
  • 2 Zucchini
  • 1 medium Red Onion
  • 2 tbsp Olive Oil For drizzling.
  • 1 tbsp Italian Seasoning For flavoring.
Optional Garnishes
  • 1/4 cup Fresh Basil For garnish.
  • 1 tsp Crushed Red Pepper Flakes For added heat.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Boil a large pot of salted water and cook ziti according to package instructions for 8-10 minutes.
  2. Chop bell peppers, zucchini, and red onion into bite-sized pieces. Spread on a baking sheet, drizzle with olive oil and Italian seasoning. Roast for 20-25 minutes.
  3. Drain the cooked ziti, mix with marinara sauce, and half of the roasted vegetables.
  4. Grease a baking dish, layer half of the ziti mixture, add half of the mozzarella, then the remaining mixture, finalize with the rest of the mozzarella and Parmesan.
  5. Bake for 25-30 minutes until bubbly and golden.
  6. Let it rest for 5 minutes, then garnish with fresh basil and red pepper flakes before serving.
