Preparation Steps
- Preheat your oven to 400°F (200°C). Boil a large pot of salted water and cook ziti according to package instructions for 8-10 minutes.
- Chop bell peppers, zucchini, and red onion into bite-sized pieces. Spread on a baking sheet, drizzle with olive oil and Italian seasoning. Roast for 20-25 minutes.
- Drain the cooked ziti, mix with marinara sauce, and half of the roasted vegetables.
- Grease a baking dish, layer half of the ziti mixture, add half of the mozzarella, then the remaining mixture, finalize with the rest of the mozzarella and Parmesan.
- Bake for 25-30 minutes until bubbly and golden.
- Let it rest for 5 minutes, then garnish with fresh basil and red pepper flakes before serving.
