Ingredients

For the Sandwich
  • 2 slices Bread Choose your favorite type; sourdough adds a delightful tang.
  • 6 slices Bacon The star ingredient; try pancetta or turkey bacon for lighter options.
  • 2 medium Onions Sweetness from caramelization is key; pressure-cook for speed.
  • 2 tablespoons Olive Oil Used for sautéing onions; swap with butter for extra richness.
  • 1 cup Cheese Cheddar and Gruyère are recommended, but feel free to experiment.
  • 2 tablespoons Unsalted Butter Essential for a golden, crispy crust; vegan spread works too.
  • to taste Salt and Pepper Season to taste to elevate the flavors.

Equipment

  • Skillet

Method

Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a skillet over medium heat. Add 2 sliced medium onions and season with salt and pepper. Cook them gently, stirring occasionally for about 15 minutes, until they are golden brown and beautifully caramelized.
  2. In the same skillet where you caramelized the onions, add about 6 slices of bacon. Increase the heat slightly to medium-high and cook until crispy, roughly 5-7 minutes. Transfer the bacon to a paper towel-lined plate to drain excess fat.
  3. Grab two slices of your favorite bread to create the base of your sandwiches. Layer a generous portion of shredded cheese on one slice, followed by the crispy bacon and caramelized onions. Top with another slice of bread.
  4. Spread unsalted butter generously on the outer sides of each sandwich. Make sure every corner is covered to achieve a beautiful toastiness.
  5. Heat your skillet over medium heat again. Place the assembled sandwiches in the skillet and grill for about 4-5 minutes on each side, pressing down gently with a spatula.
  6. Once the sandwiches are grilled to perfection, remove them from the skillet and let them cool for a minute. Slice them in half to reveal the gooey cheese and savory filling.
